Berry and Banana Bread with Cacao Swirl
This banana bread is absolutely to die for! The gooey bits of melted berries are insanely yum.
It’s refined sugar free but you wouldn’t know it. The ingredients in this recipe can be easily swapped for vegan alternatives so everyone can enjoy this one!
Ingredients
2 cups wholemeal spelt or buckwheat flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon (Ceylon/true cinnamon)
1/4 cup of coconut sugar
1 teaspoon cacao powder (for swirl)
Pinch of salt
2 organic, free range eggs or flax eggs
1/4 cup of melted coconut oil
2 mashed ripe bananas
1/2 cup of frozen mixed berries (added last)
1/3 cup of milk of choice
1 teaspoon vanilla extract
Method
Preheat oven to 180c
Mix dry ingredients in a large bowl until combined, then add wet ingredients
Scoop a small amount of the batter into a small bowl and add cacao powder. Mix until combined and keep aside.
Add frozen berries into original batter mixture and stir through
Line a loaf pan with baking paper and pour original mixture into it
Dollop small amounts of the cacao batter on top of the mixture in the loaf pan and swirl lengthways through with a clean chopstick. Swirl again horizontally
Top with oats, buckwheat kernels and/or more frozen berries
Cook in the oven for 45 minutes or until completely cooked through
