Slow Cooked Lamb Shanks

Winter is well and truly on its way!

Enjoy a heartwarming meal with my Slow Cooked Lamb Shanks, a recipe that promises succulence and deep flavours with minimal effort. It’s perfect for cozy nights in or when you need a meal that takes care of itself while you’re busy (yes please!).

Slow-cooked meat and vegetables are much easier for the digestive system to break down, making this recipe ideal for anyone on a gut-healing journey.

Ingredients:

  • 2-4 lamb shanks (browning optional, 1 per person)

  • 3 stalks of celery, diced

  • 2 carrots, diced

  • 800g Mutti Polpa canned diced tomatoes

  • 3-4 cloves of freshly crushed garlic

  • 1 onion, diced

  • 1 heaped tablespoon of bone broth concentrate, dissolved in hot water (I used Nutra Organics Beef Bone Broth)

  • 1-2 tablespoons of tomato paste

  • 1 tablespoon of Worcestershire sauce

  • 1 tablespoon of apple cider vinegar (enhances collagen extraction from the lamb shanks)

  • Salt and pepper to taste

Method:

  1. Place all the ingredients into a slow cooker.

  2. Set the cooker on low and cook for 8 hours.

    (Yes, it’s really that easy!)

This recipe is as straightforward as it gets, letting the slow cooker do all the hard work. The apple cider vinegar not only tenderises the meat but also helps in extracting all the nutritious collagen and gelatine from the bones, making this dish not just tasty but also wholesome and gut healing.

Serve this comforting bowl of goodness with some mashed potatoes and oven roasted broccolini for a complete meal.
