Protein Pancakes

This recipe is probably the most popular recipe I’ve shared on my instagram. Every time I post these pancakes, I constantly get messages from people who have tried these and love them! I hope you do too!

They are so simple and can be adjusted to include your favourite toppings or flavours. This entire recipe is almost exactly what I use to make my usual morning bowl of oats, just blended with an egg added and pan fried. It’s that simple - and YUM!

Ingredients - Serves One (Makes 3 Small Pancakes)

  • 50g organic rolled oats

  • 1/2-1 scoop of protein powder (I use Pranaon - Coconut Mylk or Honeycomb are epic with this recipe!)

  • 1 organic egg

  • 1/2 teaspoon of baking powder

  • 2 tablespoons of water

  • Toppings of choice: melted frozen berries, Greek yoghurt, hemp seeds, chia seeds, maple syrup, banana, passionfruit, nut butter, stewed apple, etc.

  • I love melting my frozen berries into a syrup and pouring on top of Greek yoghurt!

Method

  1. Blend oats and protein powder together in a blender or food processor

  2. Add in the egg and water, and blend again until well combined

  3. Preheat and grease a pan with some extra virgin olive oil or grass fed butter

  4. Pour batter onto the hot pan in 3 small pancaked sized circles

  5. Allow to cook for approximately 2 minutes, then flip and repeat

  6. Place frozen berries into a saucepan and heat until softened

  7. Transfer cooked pancakes to a plate and top with desired toppings
